Fresh Tomato Shrimp Pasta

Summer shrimp and fettuccine made with juicy tomatoes, spinach, herbs, and creamy mozzarella.
Ingredients:
  • 8 ounces dry fettuccine pasta
  • 3 cloves garlic
  • 0.5 sweet onion, cut into wedges
  • 3 tablespoons fresh oregano leaves
  • 4 tablespoons olive oil
  • 4 medium tomatoes, chopped
  • 3 tablespoons chopped fresh basil
  • 1 cup spinach leaves
  • 1 pound cooked shrimp - peeled and deveined
  • 8 ounces fresh mozzarella cheese, diced
Instructions:
  • Bring a large pot of salted water to a boil. Add pasta and cook until tender, about 8 minutes. Drain.
  • In a food processor, blend garlic, onion, and oregano until finely chopped. Heat olive oil in a large skillet over medium heat. Add the onion mixture and cook until fragrant and almost golden. Stir in tomatoes, basil, salt, and pepper. Simmer for 5 minutes while pasta cooks, stirring occasionally.
  • Sauté spinach until wilted, add shrimp right before pasta finishes cooking. Heat through. Combine with pasta in a large bowl, blend in mozzarella cheese.
