Ingredients:
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 5 large tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 pound Alaskan cod
  • 0.5 pound large shrimp, peeled and deveined
  • salt to taste
  • 1 tablespoon dried oregano, or to taste
Instructions:
  • In a skillet over medium-high heat, sizzle garlic in olive oil until golden, being careful not to burn. Add tomatoes and stir until juicy. Mix in 1 teaspoon oregano.
  • Lay the cod and shrimp on top of the tomato mixture, then sprinkle with salt. Cover the skillet and let it simmer for 3 minutes. Turn the cod over, season with salt and 1 tablespoon of oregano. Cover the skillet again and cook for another 3 minutes. Uncover and cook until the juices slightly evaporate, about 2 to 3 minutes.
