An Alaskan halibut chowder with a unique twist from shredded carrots and Cheddar cheese.
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 large onion, finely diced
  • 2 large potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 6 cups chicken stock
  • 1 (8 ounce) can stewed tomatoes, diced
  • 2 large carrots, shredded
  • 1.5 cups milk
  • 0.5 cup heavy cream
  • 2 pounds halibut, cut into 1-inch cubes
  • 0.5 cup shredded Cheddar cheese
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • In a large pot over medium heat, melt the butter until it's sizzling. Add the onion and sauté until it's soft and translucent, approximately 5 minutes. Stir in the potatoes and garlic, cooking until the potatoes are just beginning to soften, about 10 minutes.
  • Combine chicken stock, tomatoes, and carrots in a pot. Bring to a boil, then lower heat to medium-low, cover, and simmer for 10 minutes. Mix in milk and cream, season with salt and pepper, then add halibut. Simmer until halibut is cooked through, around 10 minutes. Gently fold in Cheddar cheese and red pepper flakes until melted. Serve hot.
