Hearty and wholesome slice perfect for family meals.
Ingredients:
  • Olive oil, to grease
  • 3 (about 350g) zucchini, coarsely grated
  • 10 eggs
  • 125ml (1/2 cup) thin cream
  • 40.00 ml coarsely chopped fresh continental parsley
  • 1 tsp fresh thyme leaves
  • 2 (about 200g) carrots, peeled, coarsely grated
  • 100g ham, chopped
  • 150g feta, crumbled
  • 1 x 250g punnet grape tomatoes, halved lengthways
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 170°C. Grease a square 20cm ovenproof dish with oil and line the base and sides with non-stick baking paper, letting the paper hang over the edges.
  • Gently press the zucchini to remove excess moisture.
  • Combine eggs, cream, fresh parsley, and thyme in a large bowl. Season generously with salt and pepper. Mix in zucchini, carrot, ham, and 100g of crumbled feta until evenly incorporated.
  • Transfer the mixture into the prepared dish. Top it with tomatoes, cut-side up, and sprinkle the leftover feta on top. Bake in the oven for 50 minutes or until it is set and golden brown. Let it rest in the pan for 15 minutes to cool before serving. (For freezing instructions, refer to the notes section.)
  • Cut the slices into pieces and serve with crusty bread and salad leaves, if preferred.
