Versatile snack perfect for school days!
Ingredients:
  • 1 medium zucchini, grated
  • 1 small carrot, peeled, grated
  • 1 medium red capsicum, finely chopped
  • 100g reduced-fat ham, chopped
  • 187.50 ml grated reduced-fat tasty cheese
  • 75.00 gm self-raising flour
  • 57.50 gm vegetable oil
  • 4 eggs, lightly beaten
  • 6 cherry tomatoes, halved
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease a 3.5cm deep, 16.5cm x 26cm slice pan and line the base and sides with baking paper, leaving a 2cm overhang at the long ends.
  • In a bowl, mix zucchini, carrot, capsicum, ham, cheese, and flour. In a separate jug, whisk oil and eggs together. Pour the egg mixture into the bowl of vegetables and stir well to combine. Transfer the mixture into a pan, then smooth the surface.
  • Press sliced tomatoes evenly on top and bake for 30 minutes or until a skewer inserted in the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool. Cut into 12 pieces and serve.
