Fried rice with glazed ham and vegetables

Elevate fried rice with caramelized ham slices.
Ingredients:
  • 150g piece leftover leg ham
  • 86.63 gm soy sauce
  • 51.60 gm plum sauce
  • 45.50 gm peanut oil
  • 2 eggs, lightly beaten
  • 1 red capsicum, chopped
  • 500.00 ml shredded wombok (Chinese cabbage)
  • 125.00 ml frozen peas
  • 250g cherry tomatoes, halved
  • 800.00 gm cooked white long-grain rice
  • Green onion, thinly sliced, to serve
  • Sliced red chilli, to serve
Instructions:
  • Coat ham with a flavorful mix of 1 tablespoon soy sauce and 1 tablespoon plum sauce. Heat 1 tablespoon oil in a large frying pan and sear ham slices for 1 to 2 minutes per side until golden and cooked through. Rest on a cutting board and slice thinly.
  • Heat a wok over medium-high heat, then add 2 teaspoons of the remaining oil and swirl to coat. Pour the egg into the wok, swirling to cover the base and create a thin omelette. Cook for 1 to 2 minutes until just set. Transfer to a chopping board, roll up, and slice.
  • Pour the rest of the oil into the wok and swirl it around to coat the ingredients. Add the capsicum and stir-fry for 2 minutes until it is just tender. Mix in the cabbage, peas, ham, tomato, rice, and half of the beaten egg. Stir-fry for 3 to 4 minutes until heated through. Lastly, pour in the combined remaining soy and plum sauce, and stir-fry for an additional 1 to 2 minutes until everything is well combined.
  • Garnish the fried rice with green onion, chili, and the rest of the egg. Serve hot.
