Heart Healthy Cookbook Grilled Halibut

Try Betty Crocker's heart-healthy grilled fish with salsa recipe for a delicious way to incorporate more fish into your diet.
Ingredients:
  • 1 1/2 pounds halibut, tuna or swordfish steaks, 3/4 to 1 inch thick
  • 2 tablespoons canola or soybean oil
  • 2 tablespoons lemon or lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 clove garlic, finely chopped
  • 3 medium tomatoes, chopped (1 1/2 cups)
  • 1 medium avocado, pitted, peeled and coarsely chopped
  • 1 small jalapeño chili, seeded and finely chopped
  • 2 teaspoons lemon or lime juice
Instructions:
  • For large fish steaks, slice into 6 serving pieces. Combine all ingredients except for Tomato-Avocado Salsa in a shallow glass or plastic dish. Add fish and coat with the marinade. Cover and refrigerate for at least 30 minutes, but no more than 2 hours.
  • In a medium bowl, combine all the ingredients for the tomato-avocado salsa. Keep aside until serving.
  • Prepare the grill for direct heat. Take the fish out of the marinade and set the marinade aside. Grill the fish covered, 4 to 5 inches from medium heat, for 10 to 15 minutes. Brush the fish 2 or 3 times with the reserved marinade and flip it once, until the fish flakes easily with a fork. Dispose of any leftover marinade. Serve the grilled fish with salsa.
