Cheesy broccoli soup garnished with popcorn - a quick and heart-healthy dinner option from Betty Crocker's cookbook.
Ingredients:
  • 1 tablespoon canola or soybean oil
  • 1 medium onion, chopped (1/2 cup)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon salt
  • 3 cups original-flavored soymilk or fat-free (skim) milk
  • 2 teaspoons cornstarch
  • 1 1/2 cups shredded reduced-fat sharp Cheddar cheese (6 oz)
  • 3 cups bite-size fresh or frozen (thawed) broccoli florets
  • 1 cup popped reduced-fat popcorn, if desired
Instructions:
  • In a 3-quart saucepan, warm oil over medium heat. Add onion, flour, and salt. Sauté for 2 to 3 minutes, stirring regularly, until onion is tender.
  • In a small bowl, whisk together the soymilk and cornstarch until smooth. Gradually pour this mixture into the onion mixture. Cook while stirring frequently for 5 to 6 minutes until thick and bubbly.
  • Add the cheese and stir until melted, approximately 3 minutes. Next, add the broccoli and cook for about 1 minute until heated through. Finally, serve topped with popcorn.
