Heart Healthy Cookbook Pancakes

Whip up delicious heart-healthy oat pancakes in only 25 minutes using Betty Crocker's recipe!
Ingredients:
  • 1/2 cup quick-cooking or old-fashioned oats
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/4 cup Gold Medal™ whole wheat flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup fat-free (skim) milk
  • 1/4 cup fat-free cholesterol-free egg product, thawed or 2 egg whites
  • 2 tablespoons canola or soybean oil
Instructions:
  • Blend all ingredients using a hand beater or whisk until smooth. For lighter pancakes, mix in an extra 2 to 4 tablespoons of milk.
  • Prepare your griddle by spraying it with cooking spray and heating it to 375°F, or heat your nonstick skillet over medium heat. You'll know it's ready when you sprinkle a few drops of water on the surface and you see the bubbles skitter around.
  • Pour 3 tablespoons of batter onto the hot griddle for each pancake. Cook until puffed and dry around the edges, then flip and cook the other sides until golden brown.
