Try this delicious and nutritious frozen broccoli rice dish from Betty Crocker's Heart Healthy Cookbook, ready in just one hour.
Ingredients:
  • 1 tablespoon margarine or butter
  • 1/2 cup uncooked wild rice
  • 1 1/2 cups sliced mushrooms (4 ounces)
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1 1/4 cups water
  • 1/4 teaspoon pepper
  • 1 package (9 ounces) frozen cut broccoli, thawed and drained
  • 1 tablespoon lemon juice
Instructions:
  • Melt margarine in a 10-inch nonstick skillet over medium heat. Sauté wild rice, mushrooms, and onions in the melted margarine for about 3 minutes, stirring occasionally, until the onions are tender.
  • Combine water, salt, and pepper in a pot. Bring the mixture to a boil, stirring occasionally. Reduce heat, cover, and simmer for 40 to 50 minutes, or until rice is tender. Drain excess liquid if needed.
  • Combine the vibrant broccoli florets with a splash of zesty lemon juice. Simmer uncovered, intermittently stirring, until heated through and fragrant.
