Hearty wild rice soup loaded with chicken, broccoli, corn, and carrots - a vibrant and satisfying meal.
Ingredients:
  • 2/3 cup uncooked wild rice, rinsed, drained
  • 1/2 cup chopped onion (1 medium)
  • 5 1/4 cups Progresso™ chicken broth (from two 32-oz cartons)
  • 2 medium carrots, thinly sliced (1 cup)
  • 1/2 teaspoon dried marjoram leaves
  • 1/8 teaspoon pepper
  • 2 boneless skinless chicken breasts, cut into 1/2-inch pieces
  • 1 1/2 cups frozen corn, thawed, drained
  • 1 cup frozen broccoli cuts, thawed, drained
Instructions:
  • Combine all ingredients in a 3- to 4-quart slow cooker, excluding the thawed vegetables.
  • Cover and simmer on Low heat for 8 to 9 hours.
  • Just before serving, gently fold in the thawed vegetables. Increase the heat to High, cover, and cook for an additional 5 minutes, or until the vegetables are tender-crisp.
