Slow-Cooker Confetti Brown Rice

Create a flavorful and versatile side dish in the slow cooker with endless possibilities for customization.
Ingredients:
  • 1 1/2 cups sliced fresh mushrooms (4 oz)
  • 1/2 cup chopped carrot
  • 1/2 cup chopped red bell pepper
  • 1/2 cup uncooked extra long-grain brown rice
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup chopped fresh broccoli
Instructions:
  • Coat a 3- to 4-quart slow cooker with cooking spray and combine all ingredients in the slow cooker, excluding the broccoli.
  • Cover and simmer on high heat for 2 1/2 to 3 1/2 hours.
  • Add the broccoli and gently mix in. Cover and continue cooking for 15 to 20 minutes, or until the broccoli is tender-crisp.
