Creamy, healthy side dish with reduced fat and increased vitamin C, ready in 15 minutes.
Ingredients:
  • 1 cup water
  • 6 cups frozen corn
  • 1 medium red bell pepper, chopped (1 cup)
  • 4 oz (half of 8-oz package) 1/3-less-fat cream cheese (Neufchâtel), cut into small cubes
  • 1/4 cup fat-free half-and-half
  • 1/4 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • 2 medium green onions, sliced (2 tablespoons)
Instructions:
  • In a 3-quart saucepan, bring water to a boil. Add corn and bell pepper, cover, and simmer over medium heat for 6 to 8 minutes until veggies are tender. Drain and return to the saucepan.
  • Mix in all remaining ingredients, excluding the green onions. Cover and cook over medium-low heat, stirring occasionally, until warm and well combined. Transfer to a serving dish and garnish with green onions.
