Heart Healthy Asian Fish and Veggie Stir-Fry: A delicious fusion of Asian flavors with savory fish and crisp veggies.
Ingredients:
  • 1 lb halibut, swordfish or tuna fillet, cut into 1-inch pieces
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, finely chopped
  • 1 teaspoon finely chopped gingerroot
  • 1 box (10 oz) frozen asparagus cuts, thawed, drained
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 1 medium tomato, cut into thin wedges
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon lemon juice
  • Additional reduced-sodium soy sauce, if desired
Instructions:
  • Spray a 10-inch nonstick skillet with cooking spray and heat over medium-high heat. Add fish, onion, garlic, gingerroot, and asparagus. Cook and stir for 2 to 3 minutes, or until the fish is almost flaky when tested with a fork.
  • Gently incorporate all remaining ingredients. Cook until the fish easily flakes with a fork and the mixture is heated through. Serve with extra soy sauce on the side.
