Halibut croquette cakes: flaky fish with onion, cheese, mayo, and zesty lemon - a delicious family dinner.
Ingredients:
  • 0.25 cup vegetable oil, divided
  • 1 pound skinless, boneless halibut fillets
  • 1 pinch salt and ground black pepper to taste
  • 1 cup shredded Italian cheese blend
  • 1 egg
  • 0.25 cup mayonnaise
  • 0.25 cup minced onion
  • 2 tablespoons lemon juice
  • 2 tablespoons panko bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dry mustard
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • 0.75 cup panko bread crumbs
Instructions:
  • In a large skillet over medium-high heat, heat 2 tablespoons of oil. Add the halibut fillets and season with salt and pepper. Cook for about 4 minutes on each side until the fish flakes easily with a fork. Transfer to a plate and let it cool for about 5 minutes until easily handled. Flake the fish into small chunks.
  • Combine Italian cheese blend, egg, mayonnaise, onion, lemon juice, 2 tablespoons bread crumbs, Worcestershire sauce, garlic powder, dry mustard, and seafood seasoning in a large bowl. Carefully fold in flaked halibut, adding extra mayonnaise if needed for a moist mixture.
  • In a shallow dish, spread 3/4 cup of bread crumbs. Shape the halibut mixture into 6 cakes and coat both sides with the bread crumbs.
  • In a skillet over medium-high heat, sizzle the halibut cakes in the remaining 2 tablespoons of oil until beautifully golden on each side, approximately 5 minutes per side.
