Summer halibut with strawberry compote, baby potatoes, and asparagus - a delicious showstopper!
Ingredients:
  • For the halibut and vegetables:
  • 1 1/2 pounds mixed marbled potatoes, halved lengthwise
  • 1 pound asparagus, tough ends trimmed away
  • 6 tablespoons extra virgin olive oil, divided
  • 4 6-ounce boneless halibut filets
  • Salt and ground black pepper
  • For the compote:
  • 1 cup red wine
  • 1/4 cup balsamic vinegar
  • 1 1/2 cups Well•Pict strawberries, coarsely chopped
Instructions:
  • Preheat oven to 425°F and prepare a large baking sheet by lining it with parchment paper or a silicone baking mat.
  • Prepare and roast the vegetables: Toss potatoes with 2 tablespoons of olive oil, salt, and pepper in a large bowl. Spread the potatoes on a baking sheet and roast for 15 minutes until golden brown. In the same bowl, coat asparagus with 1 tablespoon of olive oil, salt, and pepper. After 15 minutes, move the potatoes to one side of the pan and add asparagus to the other side. Return the pan to the oven and roast for another 12-15 minutes until tender.
  • Prepare the compote by combining wine, vinegar, honey, and 3/4 cup of strawberries in a medium pot over medium-high heat. Simmer for 10-15 minutes until the mixture reduces by half, keeping it slightly thin. Stir in the remaining 3/4 cup of strawberries, then set aside.
  • Prepare the halibut: Pat it dry with paper towels and season generously with salt and pepper. Heat 3 tablespoons of olive oil in a large nonstick skillet over medium-high heat until shimmering. Add the halibut when the pan is nice and hot. Sear for 3-5 minutes on the first side, then flip and cook for another 5 minutes (adjust timing based on thickness) until the fish is firm and flakes easily with a fork.
  • Presentation: Accompany the cooked halibut with roasted potatoes and asparagus, and garnish with a generous spoonful of compote.
