Capers and Halibut

Impress guests with quick and flavorful seared halibut in zesty lemon-caper sauce.
Ingredients:
  • 1 tablespoon olive oil
  • 2 (8 ounce) steaks halibut
  • 0.5 cup white wine
  • 0.25 cup butter
  • 1 teaspoon chopped garlic
  • 3 tablespoons capers, with liquid
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium-high heat, sear halibut steaks in oil until beautifully browned on each side, about 2 to 3 minutes per side. Transfer to a plate.
  • Add wine to the pan and bring to a boil, deglazing with a wooden spoon. Reduce wine until almost gone, then add garlic, butter, and capers. Season with salt and pepper and simmer for 1 minute to blend flavors.
  • Place the halibut steaks back into the pan and generously spoon the sauce over them so they are completely coated. Continue cooking until the fish easily flakes with a fork, about 2 to 3 minutes more.
  • Cut the steaks in half and generously drizzle the delicious pan sauce over them before serving.
