Flavorful pasta dish with a twist.
Ingredients:
  • 2 garlic cloves, crushed
  • 1 red onion, finely chopped
  • 650g ripe tomatoes, finely chopped
  • 250.00 ml green olives, pitted, finely chopped
  • 40.00 ml capers, finely chopped
  • 250.00 ml fresh flat-leaf parsley leaves, roughly chopped
  • 18.20 gm olive oil
  • 42.00 gm lemon juice
  • 500g spaghetti
  • mixed salad leaves, to serve
Instructions:
  • Combine garlic, onion, tomatoes, olives, capers, parsley, oil, lemon juice, salt, and pepper in a large bowl. Mix thoroughly.
  • Boil pasta in a large saucepan of salted water following package instructions until al dente. Drain and return to saucepan.
  • Pour in the flavorful tomato mixture and gently sauté on low heat for 1 minute. Season to perfection and enjoy alongside a fresh salad.
