Flavor-packed potato salad with capers and prosciutto.
Ingredients:
  • 1.5kg small chat potatoes, halved
  • 62.50 ml capers, rinsed, chopped
  • 100g thinly-sliced prosciutto
  • 6 green onions, thinly sliced
  • 82.50 ml chopped fresh flat-leaf parsley leaves
  • 56.88 gm olive oil
  • 40.00 ml white wine vinegar
  • 11.80 gm dijon mustard
Instructions:
  • Boil potatoes in a large pot of salted water until just tender, about 10-15 minutes. Drain.
  • Prepare the dressing by combining all ingredients in a screw-top jar. Add a sprinkle of pepper for seasoning. Close the lid tightly and shake well to mix everything together.
  • Combine potatoes, capers, and dressing in a large bowl, gently toss together, and let cool.
  • In a large non-stick pan over medium heat, crisp up the prosciutto for 2 minutes on each side. Transfer to a paper towel-lined plate and break into pieces.
  • Combine green onions, parsley, and savory prosciutto with the potato mixture, ensuring all ingredients are evenly distributed. Serve and enjoy!
