Fettuccine with Wild Mushrooms

Indulge in a rustic Italian dish: savory mushroom pasta ready in just 60 minutes.
Ingredients:
  • 1 cup hot water
  • 1 package (about 1 oz) dried porcini or cèpe mushrooms
  • 2 tablespoons olive or vegetable oil
  • 1 small onion, chopped (1/4 cup)
  • 2 cloves garlic, finely chopped
  • 1 cup whipping (heavy) cream
  • 1/2 teaspoon salt
  • 8 oz uncooked fettuccine
  • Coarsely ground pepper
Instructions:
  • Place the mushrooms in a small bowl and cover them with water. Allow them to soak for 30 minutes, then drain. Coarsely chop the mushrooms. Prepare the fettuccine according to package instructions, then drain and keep warm.
  • In a 10-inch skillet, warm oil over medium heat. Saute mushrooms, onion, and garlic until onion is tender, stirring occasionally. Add whipping cream and salt, bring to a boil, then simmer uncovered on low heat for 3 to 5 minutes until slightly thickened, stirring occasionally.
  • Place the fettuccine back into the saucepan. Drizzle the sauce over the fettuccine and toss until well coated. Sprinkle with pepper before serving.
