Curtis Stone's quick and delicious fettucine with feta and greens is perfect for family meals.
Ingredients:
  • 250.00 ml frozen peas
  • 375g Brand Fettuccine
  • 450g broccoli, cut into small florets
  • 100g prosciutto, from the deli
  • 18.20 gm extra virgin olive oil
  • 75g feta, crumbled
  • Carrot ribbons, optional, to serve
  • Basil leaves, optional, to serve
Instructions:
  • Rinse the peas in a sieve under warm water for 1 minute to partially thaw.
  • Cook the fettuccine in a large pot of salted boiling water according to package directions. Add peas and broccoli for the last 2 minutes of cooking until veggies are tender and pasta is al dente. Drain and return to the pot.
  • Cook the prosciutto under a hot grill or in a frying pan until golden brown and crispy. Let it cool slightly, then break it into crumbles.
  • Combine the oil, prosciutto, and feta with the fettuccine mixture, tossing until well mixed.
