Creamy pasta with fat-free evaporated milk and flavorful smoked turkey sausage for a healthier twist.
Ingredients:
  • 8 ounces uncooked fettuccine
  • 1 cup evaporated fat-free milk
  • 1 teaspoon Creole or Cajun seasoning
  • 1 jar (7 ounces) roasted red bell peppers, drained
  • 1/2 pound fully cooked smoked turkey sausage, cut into 1/4-inch slices
  • 2 medium green onions, sliced (1/4 cup)
Instructions:
  • Prepare and drain fettuccine following package instructions.
  • Blend milk, Creole seasoning, and bell peppers in a blender or food processor until smooth while the fettuccine is cooking.
  • Transfer the pepper mixture to a 12-inch skillet. Cook over medium heat, stirring occasionally, until thickened. Add sausage and heat through without boiling.
  • Top the fettuccine with the sausage mixture and garnish with onions.
