Fiesta Salsa

Elevate fresh or canned tomatoes with store-bought fiesta salsa mix for a delectable salsa.
Ingredients:
  • 4.5 cups finely diced fresh tomatoes
  • 3 tablespoons white vinegar (5% acidity)
  • 0.25 cup Ball® Fiesta Salsa Mix - MIX WELL BEFORE MEASURING
Instructions:
  • Check two pint-sized jars for cracks and rust on rings, discard any defective ones. Place jars in simmering water until salsa is ready. Wash new lids and rings in warm soapy water.
  • In a large saucepan, combine tomatoes, vinegar, and fiesta salsa mix and bring to a flavorful boil. Lower the heat and let it simmer for 5 minutes.
  • Pour the piping hot salsa into sterilized jars, leaving 1/2 inch of space at the top. Gently swirl a knife around the inside of the jars to eliminate any air bubbles. Use a damp paper towel to wipe the rims clean. Place the lids in the center of each jar, then secure with bands until fingertip tight.
  • Fill a large stockpot halfway with water and bring to a boil. Use a rack to carefully lower jars 2 inches apart into the boiling water. Ensure the jars are covered by at least 1 inch of water. Cover, bring to a rolling boil, and process for 35 minutes, adjusting for altitude if needed.
  • After cooking, set the jars apart and let them cool for 12 to 24 hours. Check lids by pressing the center gently to confirm they're secure. Remove rings, then store the jars in a cool, dark place.
