Sweet and fruity loaf pairs beautifully with tangy blue cheese.
Ingredients:
  • 100g dried figs
  • 247.50 gm red wine
  • 1 pinch ground cinnamon
  • 1 pinch allspice
  • 57.50 gm walnuts, toasted
  • Icing sugar, to serve
  • Blue cheese, to serve
  • Crackers, to serve
Instructions:
  • Dice figs. Combine them in a small saucepan with red wine, ground cinnamon, and allspice. Cook gently for 5 minutes. Allow to rest for 1 hour to enhance flavors. Strain thoroughly before using.
  • Place the ingredients in a food processor and blend until smooth. Then add the walnuts and pulse until they are coarsely chopped.
  • Dust a sheet of parchment paper with powdered sugar. Spoon the fig mixture in the center, then roll it up. Wrap in plastic wrap, making sure it's tightly sealed. Chill in the refrigerator for an hour until firm. Enjoy with blue cheese and crackers.
