Fig-Walnut Gingerbread Bars

Impress guests with fig-walnut gingerbread bars made with Betty Crocker® cookie mix - a delicious holiday treat.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Limited Edition Gingerbread Cookie Mix
  • 1/2 cup butter, softened
  • 1 egg
  • 1 jar (11.5 oz) fig preserves
  • 1/2 cup chopped dried Calimyrna figs
  • 2 tablespoons packed brown sugar
  • 1/2 cup chopped walnuts, toasted
  • Powdered sugar, if desired
Instructions:
  • Preheat oven to 350°F. Line an 8-inch square pan with foil, allowing excess foil to hang over 2 opposite sides of the pan; then, generously coat the foil with cooking spray.
  • Mix the cookie mix, butter, and egg in a large bowl until a soft dough forms. Set aside 2/3 cup of dough. Press the remaining dough into the bottom of the pan and bake for 15 minutes.
  • Combine the preserves, chopped figs, and brown sugar in a small bowl. Spread the mixture over the partially baked cookie crust. Then, stir the walnuts into the reserved dough and crumble it over the filling.
  • Bake for 30-32 minutes until golden. Allow to cool completely in the pan on a cooling rack for about 2 hours. Use foil to easily lift the bars out of the pan, then cut them into 4 rows by 4 rows and sprinkle with powdered sugar.
