Filet Mignon with Mushrooms

Impress with seared filet mignon steaks topped with rich mushroom sauce in this easy date night recipe.
Ingredients:
  • 2 slices bacon
  • 1.5 tablespoons unsalted butter, divided
  • 1 clove garlic, mashed to a paste
  • 6 white mushrooms, thinly sliced
  • 1 pinch salt and ground black pepper to taste
  • 0.33333334326744 cup bourbon
  • 0.33333334326744 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced fresh parsley leaves
  • 2 filet mignon steaks, about 1 inch thick
Instructions:
  • Cook bacon in a sizzling cast iron skillet until crispy for about 10 minutes. Remove and crumble on paper towels, while reserving the flavorful bacon fat in the skillet.
  • Melt butter in a skillet over medium-low heat. Saute garlic until softened, around 1 to 2 minutes. Add mushrooms, salt, and pepper. Cook until liquid from mushrooms reduces, about 5 to 7 minutes. Pour in bourbon and simmer until almost evaporated. Mix in water, lemon juice, and Worcestershire. Simmer until sauce slightly thickens. Transfer to a small saucepan, then add bacon and parsley. Keep warm until serving.
  • Gently pat steaks dry with paper towels, then generously season with salt and pepper.
  • In a skillet over medium-high heat, melt the remaining butter until the foam subsides. Sear the steaks for 4 minutes on one side, then flip and sear for 3 to 3 1/2 minutes for medium-rare. Divide the steaks between 2 plates and generously spoon the sauce over them.
