Filet of Beef with Mustard-Herb Crust

Try this savory herb and mustard crusted beef fillet for a delicious and comforting meal.
Ingredients:
  • 1 1/2 cups fine soft bread crumbs (about 3 slices bread)
  • 1/4 cup olive oil
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh mint leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 4 center-cut beef filet mignons, 1 3/4 inch thick (8 oz each)
  • Salt and pepper, if desired
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 tablespoons Dijon mustard*
Instructions:
  • In a small bowl, combine bread crumbs with 1/4 cup of oil, along with parsley, mint, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper; set aside.
  • Position the oven rack to ensure the beef will be 4 to 6 inches away from the heat source. Preheat the oven to the broil setting.
  • Season beef generously with salt and pepper. In a 10-inch ovenproof skillet, heat 1 tablespoon of oil and butter over medium-high heat until butter is melted and sizzling. Sear beef for 5 minutes until browned. Flip and continue cooking for 10 minutes or until reaching 145°F on a meat thermometer for medium-rare doneness.
  • Spread the mustard evenly over the beef filets. Spoon 1/4 cup of topping over each filet. Use a pancake turner to press down on the topping so it sticks to the filets. Broil for 2 minutes until the bread crumbs are lightly browned.
  • Take the beef out of the oven and let it rest for 5 minutes before serving.
