Elevate roast beef with a touch of sweet, refreshing cider.
Ingredients:
  • 93.23 gm barbecue sauce
  • 41.60 gm tomato sauce
  • 187.50 ml alcoholic cider
  • 11.80 gm wholegrain mustard
  • 2.50 gm smoked paprika
  • 2 garlic cloves, crushed
  • 1.5kg piece beef scotch fillet
  • 36.40 gm olive oil
  • Fresh flat-leaf parsley sprigs, to serve
Instructions:
  • In a saucepan over medium-high heat, mix together sauces, cider, mustard, paprika, and garlic. Bring to a boil, then lower the heat and simmer uncovered for 5 to 7 minutes until the mixture slightly thickens. Let cool.
  • Tie the beef fillet with kitchen string at 5cm intervals and massage it all over with oil, then generously season with salt and pepper.
  • 1. Preheat the barbecue (with hood) hot plate over medium-high heat with the hood closed. 2. Cook the beef, turning occasionally, for 5 minutes until browned all over. 3. Transfer the beef to a disposable foil baking tray. 4. Brush the beef all over with half of the glaze mixture. 5. Lower the barbecue temperature to medium. 6. Cook the beef with the hood closed using indirect heat, basting occasionally with the remaining glaze mixture, for 1 hour and 15 minutes for medium doneness or until cooked to your liking. 7. Remove the beef from the barbecue, cover loosely with foil, and let it stand for 10 minutes. 8. Slice the beef and serve with parsley.
