Apple Cider Glazed Donut Holes: Fall flavors in a cozy, sweet bite-sized treat, perfect with hot coffee.
Ingredients:
  • For the donut holes:
  • 2 cups (255g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup (100g) sugar
  • 3/4 cup (6oz/170g) sour cream
  • 1/2 cup apple cider
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 quarts canola oil for frying
  • For the apple cider glaze:
  • 2 cups powdered sugar
  • 4 tablespoons apple cider
  • Pinch of kosher salt
Instructions:
  • Set up your drying station by placing a wire cooling rack over a baking sheet for the glazed donut holes to dry on.
  • Prepare the batter: In a large mixing bowl, combine flour, baking powder, salt, and sugar using a whisk. In a medium bowl, whisk together egg, sour cream, and apple cider. Pour the wet mixture into the dry mixture, add melted butter, and fold until a very thick batter forms.
  • Heat oil in a 3-quart saucepan to 350°F. Use a medium cookie scoop to form batter into balls. Fry in batches for 2 minutes per side until golden brown and floating. Drain on paper towels and repeat with remaining batter.
  • Prepare the glaze by whisking together powdered sugar, 2 tablespoons of apple cider, and a pinch of salt in a bowl. Gradually add more cider, a few teaspoons at a time, until a thick consistency is achieved. Note that you might not use all 4 tablespoons of cider. Keep in mind that the glaze will become thinner when drizzled on the warm donuts.
  • Prepare the glaze: Pour it into a deep bowl for easy dipping. Dip the warm (or hot) donuts in the glaze, ensuring they are fully coated. Use a spoon to assist. Remove from glaze with a fork, then let excess drip on a wire rack. Serve and enjoy while fresh!
