No-baste cider-glazed ham

Simplify Christmas lunch with an easy 'no-baste' glazed ham recipe, leaving you more time to enjoy the holiday festivities.
Ingredients:
  • 125.00 ml apple cider vinegar
  • 270.00 gm brown sugar
  • 350ml bottle fresh apple juice
  • 330ml bottle alcoholic pink lady apple cider
  • 1 bunch fresh thyme
  • 146.25 gm wholegrain mustard
  • 8kg cooked leg ham
Instructions:
  • Preheat oven to 220C (200C fan-forced).
  • In a saucepan over medium heat, mix vinegar, sugar, lemon juice, apple cider, and thyme. Stir and cook for 5 minutes until sugar dissolves. Boil and stir occasionally for 30 minutes until the glaze is reduced by half. Strain the glaze into a heatproof jug, discard thyme, and add mustard. Let it cool for 20 minutes before using.
  • Trim the ham rind about 8cm from the shank using a sharp knife. Slide your thumb under the rind starting from the other end to detach it from the fat. Peel off and discard the rind. Wrap the shank end in baking paper and foil. Position the ham, top down, in a big roasting pan.
  • Gradually drizzle the glaze over the ham, brushing it on to ensure every side is uniformly coated.
  • After baking the ham for 40 minutes, gently flip it over. Brush the ham with glaze, ensuring all sides are evenly coated.
  • Continue baking the ham for an additional 15 minutes, or until the ham turns golden and caramelized. Allow the ham to rest in the pan for 10 minutes. Remove the foil and baking paper from the ham shank. Transfer the ham to a serving plate and brush it with the remaining glaze from the pan. Serve and enjoy!
