Simmer chicken thighs and onions in apple cider for a flavorful glaze, add sambal oelek or Sriracha for a kick.
Ingredients:
  • 6 (4 ounce) boneless, skinless chicken thighs
  • 1 tablespoon extra-virgin olive oil
  • 0.5 onion, sliced into rings
  • 1.3333333730698 cups apple cider
  • 1 tablespoon sambal oelek
  • 1 teaspoon chopped fresh chives
Instructions:
  • Ensure chicken thighs are completely dry by patting them down gently with a paper towel, then generously season with salt and pepper.
  • In a large skillet over medium-high heat, sizzle olive oil, then sear chicken thighs until golden for about 4 minutes. Flip the chicken and layer onion slices on top.
  • Combine apple cider and sambal oelek, then pour over the chicken and onions. Simmer on medium-low heat until the chicken is cooked through, about 10-15 minutes. Ensure the chicken reaches an internal temperature of at least 165°F (74°C) using an instant-read thermometer. Transfer chicken and onions to a plate to keep warm.
  • Turn up the heat to medium-high and let the liquid in the skillet come to a boil. Simmer uncovered until the liquid reduces to about 3/4 cup. Drizzle over chicken thighs and onions, sprinkle with fresh chives, and serve warm.
