Beef fillet in mulled wine gravy - a gourmet twist on a classic dish.
Ingredients:
  • 35.10 gm Dijon mustard
  • 20.00 ml chopped fresh thyme
  • 1.5kg piece beef fillet
  • 6 slices prosciutto
  • 150ml red wine
  • 500ml (2 cups) beef stock
  • 6 cloves, lightly bashed
  • 1/4 tsp ground allspice
  • 2 strips orange rind
  • 32.00 gm brown sugar
  • 25g butter, chopped
Instructions:
  • Preheat your oven to 200C (180C fan forced). Combine mustard, garlic, and thyme in a bowl, season, and mix until a paste forms. Spread the paste generously over the beef fillet. Wrap the beef with prosciutto slices, ensuring it is fully covered, and tie securely with kitchen string.
  • 1. Preheat a frying pan over high heat, then brown the beef for 5 minutes. 2. Combine wine, half of the stock, cinnamon sticks, cloves, allspice, and orange rind in a roasting pan. Season well. 3. Place a wire rack in the roasting pan, then transfer the beef onto the rack. Cover with foil and roast for 30-35 minutes until desired doneness. 4. Remove beef from the oven, rest on a platter, and tent loosely with foil before serving.
  • Strain the pan juices into a saucepan over medium heat. Stir in sugar and the rest of the stock. Cook until sugar dissolves. Bring to a boil and simmer for 10 minutes till reduced by half. Mix in resting meat juices. Reduce heat, gradually whisk in butter until sauce thickens. Carve beef and serve with the gravy.
