Oven-Roasted Fillet of Beef

Impress your guests with an easy and delectable oven-roasted beef fillet main course for any occasion.
Ingredients:
  • 1 4-pound fillet of beef
  • ¼ cup Dijon mustard
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves
Instructions:
  • Allow the roast to come to room temperature by taking it out of the refrigerator 30 minutes before roasting. Preheat the oven to 500° F and place a rack in the center.
  • Coat the fillet with mustard, salt, pepper, and thyme. Heat oil in a large ovenproof skillet until shimmering. Sear the fillet on all sides for 2 to 3 minutes each side until nicely browned.
  • Roast and serve: Start by placing the fillet in the oven at 425°F. Roast until desired level of doneness, about 25 minutes for rare (130°F on meat thermometer).
