Savory Parmesan zucchini tossed in olive oil, roasted to perfection for a quick and kid-friendly side dish.
Ingredients:
  • vegetable cooking spray
  • 2 tablespoons grated Parmesan cheese
  • 0.5 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 3 medium zucchini, cubed
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly coat a 15 1/2x10 1/2-inch rimmed baking pan with vegetable cooking spray.
  • Combine the olive oil, Parmesan cheese, salt, garlic powder, and pepper in a large bowl. Toss in the zucchini until evenly coated, then spread them out in a single layer on the pan.
  • Roast in a hot oven until zucchini is tender yet slightly firm, for 15-18 minutes.
