Make delicious sausage rolls with a twist using fewer ingredients for maximum flavor.
Ingredients:
  • 15 sheets filo pastry
  • 80ml (1/3 cup) olive oil
  • 500g Beef Chevapi sausages
  • 400g punnet Tomato Medley Mix, halved
  • 1 small red onion, halved, thinly sliced
  • 375.00 ml small fresh basil leaves
  • 18.20 gm olive oil, extra
Instructions:
  • Preheat your oven to 180°C and line a baking tray with non-stick baking paper.
  • Place filo sheets on a work surface and layer them between a dry tea towel and a damp tea towel to prevent drying out. Brush one filo sheet with oil and layer another sheet on top. Repeat this process with 3 more filo sheets to create a stack. Do this with the remaining filo and oil to create a total of 3 stacks.
  • Lay 3-4 sausages on one long edge of a pastry stack, leaving a 2cm border. Press the sausages together to form a log, then roll to seal the filling. Repeat with the remaining filo and sausages to create two more rolls.
  • Begin by elegantly placing one roll at the center of the tray, positioning it seam-side down in a graceful coil shape. Gently lay another roll at the end of the coil and elegantly wrap it around, repeating this artful process with the remaining rolls until the coil is extended. Secure this masterpiece with skewers, then with a delicate touch, brush the coils with oil and sprinkle with a pinch of salt and pepper. Allow this masterpiece to bake in the oven for 35-40 minutes or until the coils turn a beautiful golden hue.
  • Combine the ripe tomato, chopped onion, fresh basil, and a drizzle of extra virgin olive oil in a bowl. Season generously with salt and freshly ground black pepper.
  • Slice the sausage roll into triangle-shaped wedges and enjoy with the flavorful tomato salad.
