Fluffy Finnish oven pancake with sweet sugar and aromatic cardamom is a delectable treat anytime.
Ingredients:
  • 2 large eggs
  • 2 cups milk
  • 1 lemon, zested and juiced
  • 2 tablespoons white sugar
  • 1 cup all-purpose flour
  • 0.25 cup unsalted butter
  • 2 tablespoons coarse sugar, such as turbinado
  • 0.5 teaspoon ground cardamom
Instructions:
  • Place a standard 11x13-inch baking pan in the oven and preheat to 425 degrees F (220 degrees C with the pan inside.
  • In a large bowl, whisk together eggs, milk, lemon zest, white sugar, and salt until well combined. Gradually add flour and continue to whisk until the mixture is silky smooth. Gently stir in lemon juice until fully mixed in.
  • Add the butter to the hot pan and let it melt until bubbling. Swirl the pan to coat the bottom with butter, then pour in the batter.
  • Bake in the preheated oven for 20-30 minutes until the pancake is lightly browned and puffed. Sprinkle a mixture of coarse sugar and cardamom over the top. Cut into slices and serve.
