Fire and Ice Smoked Salmon

Spicy red pepper flakes and refreshing mint elevate this smoked salmon to new heights!
Ingredients:
  • 0.5 cup brown sugar
  • 2 tablespoons salt
  • 2 tablespoons crushed red pepper flakes, or to taste
  • 0.5 cup finely chopped fresh mint leaves
  • 0.25 cup brandy, or to taste
  • 1 (4 pound) salmon side, bones removed with pliers
  • 2 cups alder wood chips, soaked in water, or as needed
Instructions:
  • Combine brown sugar, salt, crushed red pepper flakes, mint leaves, and brandy in a bowl to form a paste. Coat the salmon with the paste, wrap in plastic wrap, and chill in the fridge for at least 4 hours, or overnight.
  • Heat up the outdoor grill on high heat and lightly oil the grate. Place the soaked alder chips in a small disposable aluminum pie pan or on a piece of aluminum foil at the back of the grill under the grate. Once the wood chips start to smoke, reduce the heat to low, place the salmon on the grate, and cover with the lid. Smoke and cook the salmon until it turns a red-brown color and flakes easily, approximately 45 minutes.
