Mediterranean white bean dip with fire-roasted tomatoes, bursting with flavor, pairs perfectly with roasted red pepper brown rice crackers from Food Should Taste Good™!
Ingredients:
  • 1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
  • 3 tablespoons tahini
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, chopped
  • 3/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, well drained
  • Chopped fresh Italian (flat-leaf) parsley, if desired
  • Food Should Taste Good™ roasted red pepper brown rice crackers, as desired
Instructions:
  • Combine all ingredients in a food processor, excluding tomatoes, parsley, and crackers. Process until smooth, about 30 to 60 seconds.
  • Combine the drained tomatoes in a food processor and pulse on and off until well mixed. Cover and refrigerate for 1 hour to allow the flavors to blend.
  • Transfer mixture into a elegant serving bowl and generously garnish with fresh parsley. Accompany it with a selection of crisp crackers for a perfect pairing.
