Summertime salsa bursting with fire-roasted corn, spicy jalapenos, fresh cilantro, tomatoes, and zesty lime.
Ingredients:
  • 2 Roma tomatoes, chopped
  • 0.33333334326744 cup chopped red onion
  • 0.25 cup chopped cilantro
  • 3 tablespoons lime juice
  • 0.5 teaspoon cumin
  • 4 ears corn, husk and silk removed
  • 2 jalapeno peppers, halved and seeded
Instructions:
  • Mix fresh, ripe tomatoes, finely diced onion, chopped cilantro, freshly squeezed lime juice, and fragrant cumin in a spacious bowl.
  • Prepare the outdoor grill by heating it to medium heat and lightly oiling the grate.
  • Drizzle corn and jalapeno peppers with a luscious coating of olive oil.
  • Grill the corn and jalapenos until nicely charred, about 15 minutes in total, turning every 3 minutes. Let them cool on a cutting board for 5 minutes before proceeding.
  • Finely chop jalapeños and remove corn kernels from the cob. Mix them into the bowl of tomato and onion, stirring until fully incorporated. Season generously with salt and pepper.
