Spicy and tangy Firecracker Chicken over rice for an easy and flavorful dinner.
Ingredients:
  • 0.667 cup cornstarch
  • 1 teaspoon ground ginger
  • 0.5 teaspoon freshly ground black pepper
  • 1.5 teaspoons kosher salt, divided
  • 3 large eggs, beaten
  • 1.5 pounds boneless skinless chicken breasts, cut into 1 inch pieces
  • 0.25 cup canola or peanut oil
  • 0.75 cup honey
  • 0.5 cup hot pepper sauce (such as Crystal®)
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon crushed red pepper
  • 4 cups cooked white rice
  • 0.5 cup thinly sliced scallions
  • toasted white sesame seeds, for garnish
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C) and position a rack in the center.
  • In a large bowl, mix together cornstarch, ginger, pepper, and 1 teaspoon salt. In another large, shallow bowl, place beaten eggs. Coat chicken in the cornstarch mixture by tossing it in.
  • Heat 2 tablespoons of oil in a large nonstick skillet over medium-high heat until it shimmers.
  • Coat 1/3 of the chicken in eggs while the oil heats up.
  • Transfer the chicken from the slotted spoon to the hot skillet and cook in hot oil, turning once, until both sides are golden, approximately 2 minutes per side. The chicken will not be fully cooked at this stage. Place the cooked chicken in a 9x13-inch baking dish. Repeat with the remaining chicken, adding 1 tablespoon of oil for each new batch (3 batches total).
  • Combine honey, hot sauce, vinegar, crushed red pepper, and the remaining 1/2 teaspoon salt in a bowl. Drizzle the mixture over the chicken in the baking dish and toss to evenly coat.
  • Roast the chicken in the preheated oven for 25-30 minutes, stirring halfway through, until no longer pink in the center and juices run clear. Ensure it reaches an internal temperature of 165 degrees F (74 degrees C) using an instant-read thermometer.
  • Top with a bed of fluffy rice and garnish generously with fresh scallions and toasted sesame seeds.
