Make delicious homemade Firecracker Chicken faster than takeout delivery!
Ingredients:
  • For the sauce:
  • 1/2 cup buffalo sauce, like Frank's
  • 3/4 cup brown sugar
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • For the chicken:
  • 2/3 cup cornstarch
  • 1 teaspoon black pepper
  • 1 1/2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch cubes
  • 3 large eggs
  • 1/2 cup vegetable oil
  • To serve:
  • Cooked rice
  • Fresh scallions, just the green ends, chopped
Instructions:
  • Preheat the oven to a toasty 400°F.
  • Combine the sauce ingredients in a medium bowl and let the flavors mingle while you continue with the recipe.
  • Coat the chicken: Mix cornstarch, salt, and pepper in a bowl or large plastic bag. Add chicken and mix well. Beat eggs in a medium bowl. Place paper towels on a plate and organize near your stove.
  • Heat vegetable oil in a large skillet. Dip chicken in egg mixture, allowing excess to drip off, then transfer to the skillet. Cook on each side for 3 minutes until golden brown. Chicken will be partially cooked.
  • After cooking the chicken, carefully lift it out of the skillet with a slotted spoon onto a paper towel-lined plate to absorb any excess oil. Then, place the chicken in a 9x13-inch baking dish and coat it evenly with the sauce.
  • Roast the chicken: Roast the chicken in the oven for 25-30 minutes, stirring once to evenly cook. The chicken should be fully cooked and coated in a thick, glossy glaze when done.
  • Present the chicken alongside fluffy cooked rice, topped with fresh scallions for a delightful finishing touch.
