Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 3 eggs
  • 1 package (8 oz) cream cheese, softened
  • 1 container (6 oz) Yoplait® Original yogurt French vanilla
  • Golden yellow gel or paste food color
  • Orange gel or paste food color
  • 3/4 cup Cheerios™ cereal
  • 6 pretzel sticks
  • 2 brown candy coated pieces
  • Brown decorating gel
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans). Grease only the bottom of a 6-inch round cake pan with shortening or cooking spray and line 16 regular-size muffin cups with paper baking cups.
  • In a large bowl, blend cake mix, bananas, oil, water, and eggs with an electric mixer on low speed, then increase to medium speed for 2 minutes, scraping the bowl occasionally until the batter is smooth. Transfer 1 3/4 cups of the batter to a 6-inch round pan and divide the remaining batter into 16 lined muffin cups. Bake the round cake for 35 to 40 minutes and the cupcakes for 18 to 23 minutes or until a toothpick comes out clean. Let cool for 10 minutes, then remove from pans and cool completely on a rack for about 30 minutes.
  • In a small bowl, use an electric mixer on medium speed to blend cream cheese and yogurt until smooth and creamy. Mix in yellow food color until you reach your preferred shade. Transfer 3 tablespoons of yellow frosting to a separate bowl and add orange food color until you achieve the desired orange hue.
  • Trim the rounded top of a 6-inch round cake horizontally. Place the cake cut side down on a plate. Cover the cake with yellow frosting before using orange frosting to create the lion's muzzle. Surround the top edges of the cake with cereal to form the mane. Add brown candy coated pieces for the eyes and pretzel sticks for whiskers. Use brown decorating gel to draw the mouth, nose, and whisker spots on the lion's face. Frost the remaining cupcakes with the extra frosting and decorate with cereal if desired. Store the cake and cupcakes in the refrigerator.
