Indulge in a delightful butter cake for a special first birthday celebration.
Ingredients:
  • Melted butter, to grease
  • 500.00g butter, chopped, at room temperature
  • 315g (1 1/2 cups) caster sugar
  • 17.60 gm vanilla essence
  • 8.00 eggs, at room temperature
  • 190g (1 1/4 cups) self-raising flour, sifted
  • 190g (1 1/4 cups) plain flour, sifted
  • 185ml (3/4 cup) milk
  • 500g butter, at room temperature
  • 750.00 gm icing sugar mixture
  • 1/2 milk
  • Nestle Smarties, to decorate
Instructions:
  • Preheat your oven to 180°C and position a shelf in the second lowest spot. Brush a 3.5cm-deep, 24 x 30cm rectangular cake pan with melted butter to grease it lightly, then line the base and sides with non-stick baking paper.
  • In a large bowl, cream together butter, sugar, and vanilla until light and fluffy using an electric beater. Add eggs one at a time, beating well after each addition. Gently fold in the combined flour and milk using a large metal spoon until fully combined. Transfer the batter to the prepared pan and use the back of a spoon to level the top.
  • Bake in the oven for 35-40 minutes or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare another cake using the same recipe. Let it cool completely.
  • Lay the cakes on a pristine work surface. Trim one short side of each cake using a large serrated knife. Join the cut sides together. Position the template (refer to notes) on the two cakes. Cut out the number using a small sharp knife.
  • Using an electric beater, whip the butter until pale and creamy. Slowly incorporate the icing sugar until well combined. Then, gradually add the milk and beat until light and fluffy.
  • Spread a thin layer of icing on the bottoms of the cakes to attach them to a cake board or serving platter.
  • Generously coat the cake with icing, ensuring every side is covered.
  • Sort the Smarties by color into four separate bowls. Encircle the sides of the cake with brown Smarties in three rows. Use the remaining three colors to outline the number on top of the cake, allowing them to slightly overlap.
