Rubber Ducky Cake

Create a festive rubber ducky cake using easy cake mix and store-bought frosting for a memorable first birthday celebration.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 2 tubs (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • Yellow food color
  • 3 orange wedge candies
  • 2 nonpareil candies (1-inch chocolate rounds topped with white sprinkles)
  • 2 chocolate chips
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pans) and generously grease the bottoms and sides of an 8-inch round cake pan, a 9-inch round cake pan, and a 10-oz custard cup.
  • Prepare cake batter following the instructions on the box. Divide the batter into three portions: pour 2/3 cup into a custard cup, and distribute the remaining batter into cake pans. Bake according to the timings provided on the box until a toothpick inserted in the center comes out clean. Allow the cakes to cool for 10 minutes, then remove from the pans and custard cup and place them on cooling racks rounded side up. Let the cakes cool completely for about 30 minutes. For easier slicing, freeze the cakes for 45 minutes before cutting to minimize crumbs.
  • Transfer the frosting into a large bowl, then mix in the food color until you achieve the desired yellow hue. Next, use a serrated knife to trim the rounded top off the 8-inch cake. Position the cake, cut side down, on a serving plate and spread 1/2 cup of frosting over the top. Place the 9-inch cake on top, rounded side up. Now, create a thin layer of frosting on the sides and top of the assembled cake to lock in any loose crumbs. Finally, pop the cake into the freezer for 30 to 60 minutes.
  • Set aside about 2/3 cup of frosting. Frost the sides and top of the cake with the rest of the frosting. Position a custard cup cake, rounded side up, 1 inch from the edge of the layered cake to create the head. On the opposite side of the head, place 2 orange candies side by side to form the tail. Use the reserved frosting to frost the head and candy tail. Optionally, add a small dab of frosting on the top of the head for a delicate "feather-like" curl.
  • Place nonpareil candies on the head to create the eyes and add chocolate chips to the center of the eyes, securing them with a small amount of frosting. Slice the rounded side of another orange candy, leaving about 1/4 inch from the flat side. Gently press the cut halves of the candy with sugared fingers to flatten and create the upper and lower halves of the beak. Insert two toothpicks through the beak and position them under the eyes. Remember to remove the toothpicks before serving and store the finished creation loosely covered.
