Sorghum spice cookie infused with apple essence for a moist and chewy texture.
Ingredients:
  • 1 cup sorghum molasses
  • 1 teaspoon baking soda
  • 1.5 cups white sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 4 cups all-purpose flour
  • 0.5 apple
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease your cookie sheets.
  • Heat sorghum in a Dutch oven over medium heat, stirring constantly. Add baking soda and take off heat. Mix in sugar and eggs. Combine salt, cinnamon, allspice, cloves, and nutmeg; add to sorghum mixture. Gradually add flour until dough is firm enough to roll out. Adjust flour amount if needed.
  • Roll out the dough on a floured surface to 1/4 inch thickness. Use cookie cutters to create your favorite shapes, like squares using a pizza cutter. Arrange cookies 1 inch apart on baking sheets.
  • Bake the cookies in a preheated oven for 10 to 12 minutes until they are firm but still soft. Take them out of the oven quickly to prevent sticking, then let them cool on wire racks. Store the cookies with half an apple in an airtight container for about a week until they soften. Optionally, top with confectioners' sugar frosting before serving.
