Chicago Style Roast Duck

Crispy spice-rubbed duck - tender inside, roasted to perfection.
Ingredients:
  • 1 (4 pound) whole duck
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • salt and pepper, to taste
  • 2 tablespoons caraway seeds
Instructions:
  • Preheat the oven to 425°F (220°C) for the perfect baking temperature.
  • Rinse duck thoroughly and gently dry with paper towels. Make diagonal cuts on the breast and legs, being cautious to only cut 2/3 of the way through the skin. Season inside and outside of the duck with garlic powder, onion powder, salt, and pepper, rubbing the spices into the meat. Sprinkle caraway seeds all over the duck, including the scored skin. Position the duck on a rack in a roasting pan, breast side facing up.
  • Roast duck in a preheated oven for 15 minutes. Flip breast side down and roast for another 15 minutes. Reduce oven temperature to 350 degrees F. Flip duck breast side up, roast for 20 minutes, then flip breast side down again for a final 20 minutes. Rest duck for 10 minutes before serving.
