Quick and comforting fish curry ready in 30 minutes.
Ingredients:
  • 200g (1 cup) Basmati rice
  • 1 x 250g jar jalfrezi cooking sauce (Patak's brand)
  • 1 ripe tomato, coarsely chopped
  • 500g firm white fish fillets (such as smooth dory), cut into 5cm pieces
  • 80ml (1/3 cup) coconut cream
  • 18.40 gm vegetable oil
  • 1 large brown onion, halved, thinly sliced crossways
  • 62.50 ml loosely packed fresh coriander leaves
Instructions:
  • Prepare flavorful rice by cooking it in a large saucepan of boiling water according to package instructions until tender, approximately 15 minutes. Then, drain the rice.
  • Heat a saucepan over medium-high heat and sauté jalfrezi sauce and tomato until fragrant. Stir in fish and coconut cream, then simmer over medium-low heat until fish is cooked through, about 5-6 minutes. Enjoy!
  • Heat oil in a large frying pan over high heat. Add the onion and sauté until browned, stirring occasionally, for about 5-6 minutes.
  • Divide the rice into individual serving bowls. Add a generous amount of fish curry on top of each bowl, followed by a sprinkle of fried onion and fresh coriander leaves for a burst of flavor and presentation.
