Elevate your fish tacos with a zesty chipotle and cilantro yogurt sauce that will impress your loved ones.
Ingredients:
  • 2 pounds tilapia fillets
  • 2 tablespoons lime juice
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 cup plain fat-free yogurt
  • 1.5 tablespoons chopped fresh cilantro
  • 1.5 teaspoons canned chipotle peppers in adobo sauce
  • 16 (5 inch) corn tortillas
  • 2 cups shredded cabbage
  • 1 cup shredded Monterey Jack cheese
  • 1 tomato, chopped
  • 1 avocado - peeled, pitted, and sliced
  • 0.5 cup salsa
  • 2 green onions, chopped
Instructions:
  • Massage tilapia fillets with a zesty 2 tablespoons of lime juice, then generously season with salt, black pepper, garlic powder, and paprika. Give each fillet a light mist of cooking spray on both sides.
  • Heat up the grill until it reaches a medium temperature and brush the grate lightly with oil.
  • In a blender, mix together yogurt, 2 tablespoons of lime juice, cilantro, and chipotle pepper until smooth to create a flavorful sauce. Set aside for later use.
  • Grill the tilapia on a preheated grill until the fish flakes easily with a fork, approximately 5 minutes per side.
  • Warm up the corn tortillas in a skillet over gentle heat for about 1 minute. Top each tortilla with grilled fish, cilantro-lime sauce, cabbage, Monterey Jack cheese, tomato, avocado, salsa, and green onions. Serve and enjoy!
