Delicious and healthy fish and noodle salad, ideal for a light meal.
Ingredients:
  • 450g packet fresh hokkien noodles
  • 3 green onions, thinly sliced
  • 1 long red chilli, thinly sliced
  • 125.00 ml fresh coriander leaves
  • 68.75 gm sweet chilli sauce
  • 65.63 gm lime juice
  • 12.20 gm fish sauce
  • Olive oil cooking spray
  • 450g frozen dory fish fillets, thawed
  • Toasted unsalted cashew nuts, to serve
Instructions:
  • In a heatproof bowl, place the noodles and cover them with boiling water. Allow them to sit for 2 to 3 minutes until tender. Gently separate the noodles with a fork, then drain them. Return the noodles to the bowl and add the onion, chili, and coriander. Mix everything together well.
  • In a jug, blend together chili sauce, lime juice, and fish sauce. Set aside 2 tablespoons of the sauce mixture. Pour the rest of the mixture over the noodles and toss well to combine.
  • Heat a frying pan coated with oil over medium-high heat. Sear fish for 2 to 3 minutes per side until fully cooked.
  • Portion out the noodle mixture and fish into individual bowls. Spoon the reserved sauce mixture over each bowl and sprinkle with nuts. Enjoy your delicious meal.
