Top chicken patties and rice noodle salad with tangy lime-chili sauce for a burst of flavor.
Ingredients:
  • 500g Chicken Mince
  • 1 garlic clove, crushed
  • 20.00 ml ginger, finely grated
  • 20.00 ml lemongrass paste
  • 4 spring onions, thinly sliced
  • 18.20 gm peanut oil
  • 100g rice vermicelli noodles
  • 1 carrot, cut into matchsticks
  • 1 Lebanese cucumber, seeded, thinly sliced
  • 100g snow peas, trimmed, thinly sliced lengthways
  • 44.00 gm sweet chilli sauce
  • 24.40 gm fish sauce
Instructions:
  • In a large bowl, mix together the chicken, garlic, ginger, lemongrass paste, and half of the spring onion. Season the mixture, then shape into 1 tablespoon-sized patties.
  • In a large frying pan over medium-high heat, heat the oil. Cook the patties in batches for 3 minutes on each side until they are golden brown and fully cooked.
  • While the noodles cook according to the instructions on the packet, ensure they are well drained. Mix the cooked noodles with carrot, cucumber, snow peas, coriander, and the rest of the spring onion in a large bowl.
  • In a screw-top jar, combine sweet chili sauce, fish sauce, and lime juice. Shake well. Pour over noodle mixture and toss to combine. Serve chicken patties with the noodle salad.
